- 2 boneless, skinless chicken breasts
- 1 ripe avocado
- 1 cup shredded cheese (cheddar, mozzarella, or pepper jack)
- 4 slices of bread (sourdough, ciabatta, or whole grain)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional toppings: lettuce, tomato slices, red onion, or jalapeños
- Butter (for grilling)
Instructions
- Cook the Chicken:
- Season the chicken breasts with salt and pepper.
- Heat the olive oil in a skillet over medium heat.
- Add the chicken breasts and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let them rest for a few minutes before slicing.
- Prepare the Avocado:
- While the chicken is cooking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
- Mash the avocado with a fork and add a pinch of salt and a squeeze of lemon juice for flavor.
- Assemble the Sandwich:
- On one slice of bread, layer the sliced chicken breast.
- Spread the mashed avocado generously over the chicken.
- Sprinkle the shredded cheese on top of the avocado.
- Add any optional toppings like lettuce, tomato, or jalapeños if desired.
- Top with another slice of bread.
- Grill the Sandwich:
- Heat a grill pan or skillet over medium heat.
- Butter the outside of the sandwich for a golden and crispy texture.
- Place the sandwich in the pan and cook for about 3-4 minutes on each side, or until the bread is toasted and the cheese is melted.
- Serve:
- Remove the sandwich from the pan, slice it in half, and serve immediately with your favorite side dishes.
