Instructions

  1. Cook the Chicken:
    • Season the chicken breasts with salt and pepper.
    • Heat the olive oil in a skillet over medium heat.
    • Add the chicken breasts and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let them rest for a few minutes before slicing.
  2. Prepare the Avocado:
    • While the chicken is cooking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
    • Mash the avocado with a fork and add a pinch of salt and a squeeze of lemon juice for flavor.
  3. Assemble the Sandwich:
    • On one slice of bread, layer the sliced chicken breast.
    • Spread the mashed avocado generously over the chicken.
