Ingredients
2 cups all-purpose flour
1/2 cup granulated sugar
1 tbsp baking powder
1/2 tsp salt
1 cup milk
2 large eggs
1/4 cup unsalted butter, melted
1 tsp vanilla extract
Cinnamon Swirl:
1/3 cup brown sugar (light or dark)
1 1/2 tsp ground cinnamon
3 tbsp unsalted butter, softened
Vanilla Glaze (Optional but delicious):
1/2 cup powdered sugar
1 tbsp milk
1/4 tsp vanilla extract
Instructions
Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease lightly.
Mix the dry ingredients in a large bowl: flour, sugar, baking powder, and salt.
Whisk the wet ingredients in another bowl: milk, eggs, melted butter, and vanilla.
Combine wet and dry ingredients until just mixed. Don’t overmix.
In a small bowl, stir together brown sugar and cinnamon for the swirl.
Fill muffin cups halfway with batter. Add a spoonful of the cinnamon mixture and a drizzle of softened butter. Then top with remaining batter.
Swirl gently with a knife or toothpick to marble the cinnamon mixture into the batter.
Bake for 18–20 minutes or until a toothpick comes out clean.
Cool slightly on a rack.
Mix glaze ingredients in a small bowl and drizzle over warm muffins.
