Ingredients
For the Salmon Bites:
1 lb (450g) fresh salmon fillets, skinless and boneless
1 cup panko breadcrumbs
2 tablespoons cornstarch
1 large egg
Salt and pepper to taste
1/4 cup all-purpose flour (optional for extra crispiness)
1 tablespoon olive oil (if frying)
For the Bang Bang Sauce:
1/4 cup mayonnaise
2 tablespoons sriracha (adjust for spice level)
1 tablespoon honey
1 tablespoon rice vinegar
1 teaspoon garlic powder
1 teaspoon lime juice (optional)

Instructions
Prepare the Salmon:
Cut the fresh salmon fillets into bite-sized pieces, about 1-2 inches each. Ensure the pieces are uniform to cook evenly.
Prepare the Breading:
In one bowl, combine the panko breadcrumbs, cornstarch, salt, and pepper.
In another bowl, beat the egg. If you want extra crispiness, you can add a little flour to the breadcrumb mixture.
Coat the Salmon Bites:
Dip each piece of salmon into the egg wash, then roll it in the breadcrumb mixture until it’s fully coated.
Cook the Salmon Bites:
Frying: Heat oil in a large skillet over medium-high heat. Fry the salmon bites in batches for about 3-4 minutes per side until golden brown and crispy.
Baking (optional): Preheat the oven to 400°F (200°C). Place the coated salmon bites on a baking sheet lined with parchment paper. Bake for 12-15 minutes, flipping halfway through.
Prepare the Bang Bang Sauce:
In a small bowl, whisk together the mayonnaise, sriracha, honey, rice vinegar, garlic powder, lime juice, and salt until smooth. Taste and adjust the seasoning based on your preference for spice and sweetness.
Toss the Salmon Bites in the Sauce:
Once the salmon bites are cooked, transfer them to a large bowl and drizzle with the Bang Bang sauce. Gently toss to coat all the bites evenly.
Serve:
Serve the crispy Bang Bang salmon bites immediately with extra dipping sauce on the side. Garnish with chopped green onions or sesame seeds for an extra touch.
