Parmesan Cheese: 1 cup grated (freshly grated for best flavor)
Breadcrumbs: 1 cup (can use panko or gluten-free breadcrumbs)
Eggs: 2 large eggs
Garlic Powder: 1 teaspoon
Salt: to taste
Black Pepper: to taste
Olive Oil: for drizzling (or cooking spray)
Optional Seasonings (for added flavor)
Italian Seasoning: 1 teaspoon
Paprika: 1 teaspoon
Fresh Herbs: Chopped parsley or basil for garnish
Lemon Juice: For serving or marinating
Instructions
Preheat the Air Fryer:
Set your air fryer to 380°F (193°C) and allow it to preheat while you prepare the chicken.
Prepare the Chicken:
Pat the chicken breasts dry with paper towels to remove excess moisture.
Season both sides of the chicken breasts with salt and black pepper to taste.
Set Up the Breading Station:
In a shallow bowl, beat the 2 large eggs until well combined.
In another shallow bowl, mix together the grated parmesan cheese, breadcrumbs, garlic powder, and any optional seasonings (like Italian seasoning or paprika).
Coat the Chicken:
Dip each chicken breast into the egg mixture, ensuring it’s fully coated. Allow any excess egg to drip off.
Next, coat the chicken in the parmesan and breadcrumb mixture, pressing gently to adhere. Ensure each piece is evenly coated for optimal crispiness.
Prepare the Air Fryer Basket:
Lightly spray the air fryer basket with olive oil to prevent sticking.
Place the coated chicken breasts in the basket in a single layer, making sure they are not overcrowded.
Air Fry the Chicken:
Drizzle a little olive oil over the top of the chicken for added crispiness.
Cook the chicken for 12-15 minutes, flipping halfway through the cooking time. The chicken is done when it reaches an internal temperature of 165°F (74°C) and is golden brown.
Serve:
Once cooked, carefully remove the chicken from the air fryer. Let it rest for a few minutes.
Garnish with fresh herbs, if desired, and serve with lemon wedges or your choice of side dishes.
