Ingredients
2 cups all-purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2 large eggs
1 cup granulated sugar
1/2 cup vegetable oil
2 tsp vanilla extract
3 cups peeled, cored, and chopped apples (about 2–3 medium apples)
1/2 cup chopped walnuts or pecans (optional)
1/2 cup raisins (optional)
1–2 tbsp lemon juice (for tossing apples)
Instructions
Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch round or square cake pan, or line it with parchment paper.
Prepare Apples: Peel, core, and chop your apples into small chunks. Toss them in a little lemon juice to prevent browning. Set aside.
Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
Mix Wet Ingredients: In a separate large bowl, beat the eggs and sugar together until light and fluffy. Gradually add the vegetable oil and vanilla extract, mixing until well combined.
Combine Wet and Dry: Slowly add the dry ingredients to the wet ingredients, stirring gently until just incorporated. Do not overmix.
Add Apples and Extras: Fold in the chopped apples, and if desired, stir in walnuts or pecans and raisins.
Bake the Cake: Pour the batter into the prepared pan and spread it evenly. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve: Allow the cake to cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely. Serve with whipped cream, vanilla ice cream, or as is.
