  • 3 cups peeled, cored, and chopped apples (about 23 medium apples)

  • 1/2 cup chopped walnuts or pecans (optional)

  • 1/2 cup raisins (optional)

  • 12 tbsp lemon juice (for tossing apples)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch round or square cake pan, or line it with parchment paper.

  2. Prepare Apples: Peel, core, and chop your apples into small chunks. Toss them in a little lemon juice to prevent browning. Set aside.

  3. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.

  4. Mix Wet Ingredients: In a separate large bowl, beat the eggs and sugar together until light and fluffy. Gradually add the vegetable oil and vanilla extract, mixing until well combined.

  5. Combine Wet and Dry: Slowly add the dry ingredients to the wet ingredients, stirring gently until just incorporated. Do not overmix.

  6. Add Apples and Extras: Fold in the chopped apples, and if desired, stir in walnuts or pecans and raisins.

  7. Bake the Cake: Pour the batter into the prepared pan and spread it evenly. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
