Ingredients
1 lb (450g) ground breakfast sausage (pork or turkey)
1 ½ cups all-purpose flour (or almond flour for low-carb)
1 tbsp baking powder
½ tsp salt
¼ tsp black pepper
1 tsp garlic powder (optional)
½ tsp smoked paprika (optional)
3 large eggs
½ cup milk (dairy or plant-based)
1 cup shredded cheddar cheese
½ cup chopped green onions or fresh herbs (optional)
½ cup diced bell peppers or spinach (optional)
Instructions
Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
In a skillet over medium heat, cook the sausage, breaking it into crumbles until browned. Drain excess fat and let it cool.
In a large bowl, whisk together flour, baking powder, salt, pepper, and spices.
In another bowl, beat the eggs and mix in the milk.
Combine wet and dry ingredients, then fold in the sausage, cheese, and any optional add-ins like veggies or herbs.
Spoon the mixture evenly into muffin cups, filling each about ¾ full.
Bake for 20–25 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.
Let muffins cool for a few minutes before removing from the pan. Serve warm or let cool completely for storage.
