Instructions
- Prepare the Cream Cheese Filling:
- In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
- Gently fold in the diced strawberries (or your choice of fruit) until evenly distributed.
- Assemble the Xango Rolls:
- Lay a flour tortilla on a clean surface. Spoon a generous amount of the cream cheese filling (about 2-3 tablespoons) onto the center of the tortilla.
- Roll the tortilla tightly, starting from one side and tucking in the edges as you go to secure the filling. Repeat with the remaining tortillas and filling.
- Prepare for Frying:
- Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with cinnamon (if using).
- Roll each filled tortilla in flour, then dip it into the beaten eggs, and finally coat it with breadcrumbs, ensuring it is well-covered.
- Fry the Xango Rolls:
- In a large skillet or deep fryer, heat vegetable oil over medium heat (about 350°F or 175°C).
- Carefully add the coated Xango rolls to the hot oil, frying them in batches to avoid overcrowding. Fry for about 2-3 minutes on each side or until golden brown and crispy.
- Use a slotted spoon to remove the rolls from the oil and place them on a paper towel-lined plate to drain excess oil.
- Serve:
