Preparation
- In a bowl, stir together the shredded coconut and sweetened condensed milk until the mixture is thick and sticky.
- Scoop portions from the bowl and shape them into bars or logs. Wet your fingers if the mixture is too sticky.
Freezing
- Place the shaped bars on a parchment-lined tray and freeze for about 20 to 30 minutes until firm.
Chocolate Coating
- While the bars are firming up, melt the chocolate in the microwave or using a double boiler until smooth and glossy.
- Dip each chilled bar into the melted chocolate, covering it completely, and let any excess drip off before returning it to the tray.
Setting and Storage
- Allow the chocolate to set at room temperature or refrigerate for quicker results.
- Store the bars in an airtight container in the fridge for up to a week or freeze for up to a month.
Notes
For time-saving, shape the mixture into bite-sized balls instead of bars. If too dry, add more sweetened condensed milk. You can also add vanilla extract or a sprinkle of sea salt for flavor variations.
