Method
 

Preparation
  1. In a bowl, stir together the shredded coconut and sweetened condensed milk until the mixture is thick and sticky.
  2. Scoop portions from the bowl and shape them into bars or logs. Wet your fingers if the mixture is too sticky.
Freezing
  1. Place the shaped bars on a parchment-lined tray and freeze for about 20 to 30 minutes until firm.
Chocolate Coating
  1. While the bars are firming up, melt the chocolate in the microwave or using a double boiler until smooth and glossy.
  2. Dip each chilled bar into the melted chocolate, covering it completely, and let any excess drip off before returning it to the tray.
Setting and Storage
  1. Allow the chocolate to set at room temperature or refrigerate for quicker results.
  2. Store the bars in an airtight container in the fridge for up to a week or freeze for up to a month.

Notes

For time-saving, shape the mixture into bite-sized balls instead of bars. If too dry, add more sweetened condensed milk. You can also add vanilla extract or a sprinkle of sea salt for flavor variations.
