Preparation
- Preheat your oven to 350°F and grease two small loaf pans.
- Mash the bananas in a large bowl until mostly smooth.
- Add the eggs and whisk until the batter looks glossy and unified.
- Stir in the nuts if you’re using them.
- Pour the yellow cake mix into the bowl, and gently fold with a spatula until just combined.
- Divide the batter between the two pans, smoothing the tops with the back of a spoon.
Baking
- Bake at 350°F for about 40 minutes, or until a toothpick comes out clean.
- Cool in the pans for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For a lighter twist, consider adding chocolate chips or cinnamon. Store cooled loaf in plastic or an airtight container at room temperature for up to 3 days. You can freeze slices and reheat them in a toaster or oven for a quick treat.
