Preparation
  1. Preheat your oven to 350°F and grease two small loaf pans.
  2. Mash the bananas in a large bowl until mostly smooth.
  3. Add the eggs and whisk until the batter looks glossy and unified.
  4. Stir in the nuts if you’re using them.
  5. Pour the yellow cake mix into the bowl, and gently fold with a spatula until just combined.
  6. Divide the batter between the two pans, smoothing the tops with the back of a spoon.
Baking
  1. Bake at 350°F for about 40 minutes, or until a toothpick comes out clean.
  2. Cool in the pans for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For a lighter twist, consider adding chocolate chips or cinnamon. Store cooled loaf in plastic or an airtight container at room temperature for up to 3 days. You can freeze slices and reheat them in a toaster or oven for a quick treat.
