  • 1 cup Granulated sugar Adds sweetness and contributes to a tender crumb.
  • 1/2 cup Vegetable oil Helps keep the cupcakes moist.
  • 1 cup Sour cream Adds moisture and a subtle tang.
  • 1/2 cup Raspberry jam Filling that bursts with flavor.
For the frosting
  • 1/2 cup Softened butter Beat until creamy.
  • 3-4 cups Powdered sugar Gradually mix in to achieve desired sweetness.
  • 1 teaspoon Almond extract For added almond flavor.
  • 2-3 tablespoons Heavy cream or milk Adjust for frosting consistency.

Method
 

Preparation
  1. Preheat the oven to 325°F (165°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, combine the cake mix, flour, sugar, and salt.
  3. Add water, vegetable oil, vanilla extract, almond extract, and egg whites. Mix until smooth and well-combined.
  4. Fold in the sour cream until the batter is creamy.
Baking
  1. Fill each cupcake liner halfway with the batter and bake for approximately 18 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the cupcakes to cool completely on a wire rack.
Filling and Frosting
  1. Use a small knife to cut a small hole in the center of each cupcake. Fill with raspberry jam.
  2. Beat softened butter until creamy. Gradually add powdered sugar and almond extract until smooth and fluffy.
  3. Adjust with heavy cream or milk as needed.
  4. Transfer the frosting to a piping bag and pipe onto each cupcake.
