Method
 

Preparation
  1. Preheat your oven to 350°F and spray an 8 1/2 x 4 1/2 inch loaf pan with nonstick cooking spray.
  2. In a large mixing bowl, combine the dry ingredients: flour, granulated sugar, baking powder, apple pie spice, and salt.
  3. In a separate bowl, whisk the wet ingredients: apple cider, egg, melted butter, and vanilla extract until just combined.
  4. Gently pour the wet mixture into the dry mixture and stir slowly until just combined.
Baking
  1. Transfer the batter to the prepared loaf pan and spread evenly.
  2. Bake for 65-75 minutes until golden brown.
  3. Let the bread cool in the pan for about 10 minutes.
  4. Pour the extra apple cider over the warm loaf and let it soak in.
Topping & Serving
  1. Mix granulated sugar and apple pie spice in a small bowl.
  2. Remove the bread from the pan, sprinkle the sugar spice mixture evenly, and spin the loaf for an even coating.
  3. Let the bread cool completely before slicing.
