Method

Preparation

  2. Coat a 9 x 13 inch pan with a light spray of cooking spray and set it aside.
Filling the Pan
  1. In a large bowl, toss the apples with sugar, flour, cinnamon, lemon juice, and water.
  2. Pour the apple mixture into your prepared pan, spreading it evenly.
Making the Topping
  1. In another bowl, combine the flour, baking powder, salt, and 3/4 cup granulated sugar.
  2. Add the cold butter and mix until resembling coarse pebbles.
  3. Pour in the buttermilk and vanilla extract, then stir until you have a thick batter.
  4. Spoon dollops of this batter over the apple mixture, leaving pockets of apple visible.
  5. Sprinkle the coarse sugar on top.
Baking
  1. Bake for about 45-50 minutes until the topping is golden brown and the apples are bubbling.
  2. If the top browns too quickly, cover with foil.
  3. Let the Apple Cobbler cool for at least 20 minutes before serving.

Notes

If short on time, use store-bought pie filling instead of fresh apples. Don’t rush the cooling process, and cover the cobbler with a towel if overbaked. Add nuts or dried cranberries for extra flavor.
