Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs Use store-bought for time-saving.
  • 0.25 cups sugar
  • 0.5 cups butter, melted Unsalted recommended for better control over salt.
  • 1 teaspoon cinnamon
For the cheesecake filling
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
For the apple layer
  • 4 cups apples, peeled and sliced A mix of sweet and tart apples recommended.
  • 0.5 cups sugar
  • 1 teaspoon cinnamon
For the streusel topping
  • 1 cup rolled oats
  • 0.5 cup flour
  • 0.5 cup brown sugar
  • 0.25 cups butter, melted Unsalted recommended.

Method
 

Preparation
  1. Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs, sugar, melted butter, and cinnamon. Mix until crumbly and press into the bottom of the prepared pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, blending well, and stir in vanilla. Spread cheesecake mixture over crust.
  4. Toss sliced apples with sugar and cinnamon, then layer over cheesecake mixture.
  5. Combine rolled oats, flour, brown sugar, and melted butter in a bowl. Sprinkle over the apple layer.
Baking
  1. Bake for about 60-70 minutes, or until the center is set and the top is golden brown.
Cooling
  1. Allow cheesecake to cool at room temperature, then refrigerate for at least 4 hours before serving.

Notes

For serving, top with vanilla ice cream or whipped cream. Store leftovers covered in the fridge for up to 5 days, or freeze slices for longer storage.
