Preparation
- Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a bowl, combine graham cracker crumbs, sugar, melted butter, and cinnamon. Mix until crumbly and press into the bottom of the prepared pan.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, blending well, and stir in vanilla. Spread cheesecake mixture over crust.
- Toss sliced apples with sugar and cinnamon, then layer over cheesecake mixture.
- Combine rolled oats, flour, brown sugar, and melted butter in a bowl. Sprinkle over the apple layer.
Baking
- Bake for about 60-70 minutes, or until the center is set and the top is golden brown.
Cooling
- Allow cheesecake to cool at room temperature, then refrigerate for at least 4 hours before serving.
Notes
For serving, top with vanilla ice cream or whipped cream. Store leftovers covered in the fridge for up to 5 days, or freeze slices for longer storage.
