Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
Wet Ingredients
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup melted butter or vegetable oil
  • 1 teaspoon vanilla extract
Fritter Ingredients
  • 2 cups apples, peeled and finely diced
Glaze Ingredients
  • 1 cup powdered sugar
  • 2 to 3 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
Mixing the Dry Ingredients
  1. In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt.
Whisking the Wet Ingredients
  1. In another bowl, whisk the eggs, milk, melted butter (or oil), and vanilla extract until smooth.
Combining Them
  1. Stir the wet ingredients into the dry ingredients until just combined. Do not overmix.
Folding in the Apples
  1. Gently fold in the diced apples until evenly distributed throughout the batter.
Baking Time
  1. Drop mounds of the batter onto the prepared baking sheet and bake for about 14 to 16 minutes, or until golden brown.
Making the Glaze
  1. Mix the powdered sugar with 2 to 3 tablespoons of milk and 1/2 teaspoon of vanilla extract until smooth. Drizzle over fritters before serving.

Notes

Using unsalted butter gives you the freedom to control the saltiness of your fritters. For variations, try adding chopped nuts or raisins.
