Preparation
- Prepare your pie crust through step 5 and let it chill in the fridge for at least 2 hours.
- Roll out the first disc of dough to a 12-inch circle and fit it into a 9-inch pie dish. Refrigerate it.
- In a large bowl, combine apple slices, sugar, flour, lemon juice, cinnamon, allspice, and nutmeg.
- For softer apples, pre-cook the mixture in a skillet for about 5 minutes.
- Preheat the oven to 400°F (204°C).
- Spoon the apple filling into the prepared crust.
- Roll out the second disc, cut into strips, and weave over the filling.
- Brush the top with egg wash and sprinkle with coarse sugar if desired.
Baking
- Bake for 25 minutes, then reduce the temperature to 375°F (190°C) and bake for an additional 35 to 45 minutes.
- Let the pie cool for at least 3 hours before serving.
Notes
Make the pie crust the night before for convenience. Adjust flavors with vanilla extract or raisins. If the crust cracks, press it back together.
