Ingredients
  

For the pie crust
  • 2 crusts Homemade Pie Crust or All Butter Pie Crust You can’t beat the flavor of homemade, but store-bought is a great shortcut.
For the filling
  • 10 cups Apple slices (about 8 large peeled and cored apples) 1/4 inch thick slices. A mix of Granny Smith and Honeycrisp is ideal.
  • 1/2 cup Granulated sugar or packed brown sugar Brown sugar adds a lovely depth of flavor.
  • 1/4 cup All-purpose flour Helps thicken the filling.
  • 1 tablespoon Lemon juice Enhances the apples' flavor.
  • 1.5 teaspoons Ground cinnamon Essential for apple pie.
  • 1/4 teaspoon Ground allspice Adds a warm touch.
  • 1/4 teaspoon Ground nutmeg For cozy flavor.
  • 1 large Egg For egg wash.
  • 1 tablespoon Milk Adds richness to the crust.
  • to taste Coarse sugar for sprinkling Optional, for extra crunch.

Method
 

Preparation
  1. Prepare your pie crust through step 5 and let it chill in the fridge for at least 2 hours.
  2. Roll out the first disc of dough to a 12-inch circle and fit it into a 9-inch pie dish. Refrigerate it.
  3. In a large bowl, combine apple slices, sugar, flour, lemon juice, cinnamon, allspice, and nutmeg.
  4. For softer apples, pre-cook the mixture in a skillet for about 5 minutes.
  5. Preheat the oven to 400°F (204°C).
  6. Spoon the apple filling into the prepared crust.
  7. Roll out the second disc, cut into strips, and weave over the filling.
  8. Brush the top with egg wash and sprinkle with coarse sugar if desired.
Baking
  1. Bake for 25 minutes, then reduce the temperature to 375°F (190°C) and bake for an additional 35 to 45 minutes.
  2. Let the pie cool for at least 3 hours before serving.

Notes

Make the pie crust the night before for convenience. Adjust flavors with vanilla extract or raisins. If the crust cracks, press it back together.
