Method
 

Cooking the Bacon
  1. Heat a skillet over medium heat and lay the bacon in a single layer.
  2. Cook until the edges go golden, flipping occasionally.
  3. Cook for about 3–4 minutes per side until both sides are crispy.
  4. Drain the bacon on absorbent paper.
Toast the Bread
  1. Toast the wholemeal bread until golden and lightly crisp.
Assembling the Sandwich
  1. Spread each slice of toast with 1 tablespoon of mayonnaise, and season with salt and pepper.
  2. Divide the lettuce across the toast slices. Drizzle each with olive oil.
  3. Slice the tomatoes about 1/4-inch thick and lay them over the lettuce.
  4. Season each tomato stack with a pinch of salt and pepper.
  5. Place 2 bacon slices on top of the tomatoes, then close with the remaining toast.
  6. Press gently, slice diagonally, and serve immediately.

Notes

For best results, cook bacon in batches for even crispiness. Avoid quick freezing of the assembled sandwich as it may get soggy. Experiment with the mayo or try different breads and herbs for a personalized touch.
