  • 1 lb bacon, cut into thirds Use thin-sliced bacon for quick crisping.
  • 1 lb Lil’ Smokies (small sausages) Cocktail sausages work well.
  • 1 stick butter Use unsalted butter for controlling salt.
  • 2 cups brown sugar Packed lightly for best texture.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Unwrap a pack of Lil’ Smokies and slice the bacon into thirds.
  3. Wrap each smokie with a piece of bacon and place them seam-side down in a single layer in a baking dish.
Cooking
  1. Melt the butter in a small saucepan or microwave, then stir in 1 cup (200 g) brown sugar until it melts and becomes glossy.
  2. Pour the warm butter–brown sugar mixture evenly over the wrapped smokies.
  3. Sprinkle the remaining 1 cup (200 g) brown sugar on top.
  4. Bake for 15–20 minutes at 375°F (190°C) until bubbling and the bacon starts to brown.
  5. Increase the oven to 400°F (205°C) and bake for 5 more minutes until the bacon crisps and the tops turn deep amber.
  6. Let the smokies rest for 5 minutes before serving.

Notes

Serve these warm as they are crowd-pleasers. Use toothpicks if needed and consider glazing with barbecue sauce before finishing or adding smoked paprika for flavor.
