Ingredients
  

For the rub
  • 1 tbsp brown sugar Adds sweetness and caramelization
  • 2 tsp paprika Adds smokiness
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cumin powder
  • 3/4 tsp mustard powder
  • 1 tsp cooking salt
  • 1/2 tsp black pepper
For the barbecue sauce
  • 2 cloves garlic Minced
  • 1/2 cup apple cider vinegar Balances sweetness
  • 1 1/2 cups ketchup Base for the sauce
  • 1/2 cup brown sugar
  • 2 tsp black pepper
  • 2 tsp onion powder
  • 2 tsp mustard powder
  • 1 tsp cayenne pepper Adjust to taste
  • 1 tbsp Worcestershire sauce Adds depth of flavor
  • 2 cups water
Main ingredients
  • 3 lbs beef ribs Well-marbled for flavor and tenderness

Method
 

Preparation
  1. Preheat the oven to 160 degrees C (320 degrees F).
  2. In a small bowl, mix the rub ingredients together.
  3. Coat the beef ribs on all sides with the rub.
  4. In a separate baking pan, combine the barbecue sauce ingredients.
  5. Coat the ribs in the barbecue sauce and arrange them meat side down in a baking pan.
Baking
  1. Cover the pan tightly with foil and bake for 3 1/2 hours.
  2. After 3 1/2 hours, remove the foil, turn the ribs, and spoon sauce over them.
  3. Bake uncovered for an additional 30 minutes, spooning sauce halfway through.
  4. Check for tenderness and serve with remaining sauce for dipping.

Notes

Don’t overcrowd the pan for even cooking. Bring ribs to room temperature before baking for more even cooking. Let them rest after baking for juicier meat.
