  • 6 pieces jalapeños, halved lengthwise and seeded Use ripe jalapeños for less bitterness.
  • 4 oz brie cheese, cut into bite-sized cubes Room-temp brie melts more evenly.
  • 1/4 cup berry jam (blueberry, raspberry, blackberry, or mixed) Jam choice changes the vibe quickly—try tart or sweet.
  • 1 tsp honey (optional) Drizzle for extra shine and floral note.
Optional Garnishes
  • 1/4 cup crushed pistachios
  • a pinch flaky salt
  • a pinch lemon zest
  • a few sprigs fresh thyme

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Halve each jalapeño lengthwise and scoop out the seeds until the ridges feel smooth.
  3. Press a cube of brie into each jalapeño half.
  4. Spoon a generous teaspoon of berry jam over each brie-filled jalapeño.
  5. Drizzle a little honey over the jam if desired.
Baking
  1. Arrange the poppers on a baking sheet and bake for 15–18 minutes until the brie bubbles and jalapeños soften.
  2. For a crisp finish, broil for an additional 1–2 minutes, watching closely until golden spots appear.
Serving
  1. Garnish with crushed pistachios, a pinch of flaky salt, lemon zest, or thyme, and serve warm.

You can assemble these up to 6 hours ahead of time and refrigerate before baking.
