Ingredients
  

For the Filling
  • 2 large sweet potatoes (roasted) Freshly roasted sweet potatoes bring a depth of flavor.
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • ½ cup evaporated milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • teaspoon salt
For the Crust
  • 1 9-inch unbaked pie crust Can be homemade or store-bought.

Method
 

Preparation
  1. Preheat your oven to 400°F.
  2. Slice the sweet potatoes gently with a fork and place them on a baking sheet. Roast for 45–60 minutes until soft.
  3. Let them cool, peel, and mash the sweet potatoes in a bowl.
Filling Preparation
  1. In a large mixing bowl, combine the mashed sweet potatoes with the softened butter. Mix until smooth.
  2. Add the granulated sugar, brown sugar, eggs, evaporated milk, vanilla extract, and spices. Beat until fully combined.
Assembling the Pie
  1. Roll out your pie crust into a 9-inch pie dish and crimp the edges.
  2. Pour the filling into the pie crust and smooth out the top.
Baking
  1. Bake at 350°F for 55–60 minutes. It's done when the center sets and a knife comes out clean.
Cooling
  1. Let the pie cool for at least 2 hours before slicing. Chill in the refrigerator if preferred.

Notes

Tip: Roast sweet potatoes a day in advance to cut down prep time. For flavor variation, add a splash of bourbon or maple syrup.
