Preparation
- Preheat your oven to 400°F.
- Slice the sweet potatoes gently with a fork and place them on a baking sheet. Roast for 45–60 minutes until soft.
- Let them cool, peel, and mash the sweet potatoes in a bowl.
Filling Preparation
- In a large mixing bowl, combine the mashed sweet potatoes with the softened butter. Mix until smooth.
- Add the granulated sugar, brown sugar, eggs, evaporated milk, vanilla extract, and spices. Beat until fully combined.
Assembling the Pie
- Roll out your pie crust into a 9-inch pie dish and crimp the edges.
- Pour the filling into the pie crust and smooth out the top.
Baking
- Bake at 350°F for 55–60 minutes. It's done when the center sets and a knife comes out clean.
Cooling
- Let the pie cool for at least 2 hours before slicing. Chill in the refrigerator if preferred.
Notes
Tip: Roast sweet potatoes a day in advance to cut down prep time. For flavor variation, add a splash of bourbon or maple syrup.
