Preparation
- Preheat the oven to 350°F (175°C) and grease and flour your cake pan.
- Reduce the apple cider in a saucepan over medium heat until it’s about 1 cup, then let it cool.
- In a large bowl, cream together the sugar and softened butter until light and fluffy. Beat in the eggs one at a time.
- Stir in the reduced apple cider and vanilla extract.
- In another bowl, mix the flour, baking powder, baking soda, cinnamon, nutmeg, and cloves.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Stir in the bourbon.
- Pour the batter into the prepared pan.
Baking
- Bake in the preheated oven for about 30-40 minutes or until a toothpick inserted in the center comes out clean.
Frosting
- While the cake is cooling, beat the cream cheese until smooth. Gradually mix in the powdered sugar and a splash of bourbon.
- Once the cake is completely cool, frost it generously with icing.
Notes
You can add chopped pecans or walnuts to the batter for extra crunch.
