  1. Blend the Base: Start by adding your cottage cheese, nut butter, maple syrup, and vanilla extract into a food processor. Blend until smooth and creamy.
  2. Mix it Up: Add the almond flour and cocoa powder, then blend again until you have a thick brownie batter.
  3. Chill Out: Pour the batter into a bowl and pop it into the freezer for about 20 minutes.
  4. Roll into Truffles: Scoop and roll the chilled batter into small balls using your hands. If sticky, lightly wet your hands. Place on a parchment-lined plate.
  5. Melt the Chocolate: Melt the chocolate chips and coconut oil in a microwave or double boiler until smooth.
  6. Dip and Decorate: Dip each truffle into the melted chocolate, letting the excess drip off. Sprinkle flaky sea salt on top and freeze until the chocolate hardens.
