Preparation
- First, grab your stand mixer with the paddle attachment or a large bowl with a hand mixer.
- Beat the butter on medium-high speed until it’s creamy and light—this should take about 2 minutes.
- Reduce the speed to low and add half of the powdered sugar. Mix until just combined to avoid a sugar cloud!
- Pour in the heavy cream and mix to incorporate until smooth.
- Add the vanilla extract next and mix well.
- Slowly add the remaining powdered sugar, mixing until everything is combined.
- Increase the speed to medium-high and beat for about 3 minutes until the frosting is light and fluffy.
- Check the consistency; it should be smooth and spreadable. Adjust with more cream or powdered sugar as needed.
- Taste the frosting and adjust the vanilla if needed.
Notes
Make the frosting ahead of time and store it in the fridge for up to 5 days. It can also be frozen for up to a month. Allow to thaw in the fridge overnight and whip again to restore texture.
