  • 1 cup unsalted butter, softened Use unsalted butter for better control of salt.
  • 3/4 cup packed brown sugar The molasses gives these cookies a deep, cozy flavor.
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract Vanilla enhances the flavor.
  • 3 cups all-purpose flour Measured by spooning into the cup and leveling off.
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon Use fresh cinnamon for better flavor.
  • coarse sugar for rolling Optional, for a sparkling finish.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract until smooth.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Scoop tablespoon-sized portions of dough and roll them into balls. Optionally roll in coarse sugar.
Baking
  1. Space the dough balls on the prepared baking sheets, leaving about 2 inches between them.
  2. Bake for 9 to 11 minutes until the edges are set and centers look slightly underbaked.
  3. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Chill the dough for 15-20 minutes if it's too soft. If cookies spread too much, add more flour next batch. Optional: add mini chocolate chips or chopped pecans for extra flavor.
