  • 2 teaspoons olive oil
  • 1 pound ground beef
  • 1 onion, finely diced
  • 2 teaspoons minced garlic Fresh garlic gives it that extra flavor boost.
  • 4 cups coarsely chopped green cabbage
  • 2 carrots, peeled, quartered, and sliced
Broth and Seasoning
  • 4 cups beef broth
  • 3 cans tomato sauce (8 ounces each)
  • 1/2 cup uncooked long grain rice
  • 1 bay leaf
  • 3 tablespoons brown sugar
  • 2 tablespoons parsley
  • Salt and pepper to taste

Method
 

Cooking
  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the ground beef and season with salt and pepper. Cook, breaking up the meat, until browned (4-5 minutes).
  3. Add the onion and minced garlic. Cook for another 2-3 minutes, stirring occasionally.
  4. Stir in the chopped cabbage and carrot slices.
  5. Pour in the beef broth and tomato sauce. Add the rice, bay leaf, and brown sugar.
  6. Season with more salt and pepper. Bring to a gentle simmer and cook for about 25 minutes, until the rice is tender.
  7. Remove the bay leaf and discard it. Sprinkle parsley on top before serving.

Notes

Chop vegetables the night before to speed up cooking. If the soup is too thick, add more broth or water. Variations include adding bell peppers or hot sauce.
