Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, combine the graham cracker crumbs and melted butter. Mix until it looks like wet sand. Press this mixture into the bottom of your prepared baking dish.
  3. In another bowl, beat together the softened cream cheese and sugar until creamy and smooth. Add the eggs and vanilla extract, and mix until combined.
  4. Gently fold in the diced apples and pour the mixture over the graham cracker crust.
  5. Drizzle caramel sauce generously over the top.
Baking
  1. Bake in the oven for 30–35 minutes or until the center is set and has a slight jiggle.
  2. Allow the bars to cool completely, then refrigerate for at least 2 hours before cutting into squares.

Notes

You can prepare the crust a day ahead and store it in the fridge. Avoid cracks by baking in a water bath. For added flavor, sprinkle cinnamon or nutmeg into the cream cheese mixture.
