Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, combine the graham cracker crumbs and melted butter. Mix until it looks like wet sand. Press this mixture into the bottom of your prepared baking dish.
- In another bowl, beat together the softened cream cheese and sugar until creamy and smooth. Add the eggs and vanilla extract, and mix until combined.
- Gently fold in the diced apples and pour the mixture over the graham cracker crust.
- Drizzle caramel sauce generously over the top.
Baking
- Bake in the oven for 30–35 minutes or until the center is set and has a slight jiggle.
- Allow the bars to cool completely, then refrigerate for at least 2 hours before cutting into squares.
Notes
You can prepare the crust a day ahead and store it in the fridge. Avoid cracks by baking in a water bath. For added flavor, sprinkle cinnamon or nutmeg into the cream cheese mixture.
