  • 6 cups cooked cauliflower florets fresh or frozen, tender
  • 3 tablespoons butter unsalted for flavor control
  • 1 tablespoon minced garlic fresh for extra flavor boost
  • 3 tablespoons all-purpose flour to thicken the sauce
  • 2 cups milk whole milk makes it creamier
  • 1/2 cup grated parmesan cheese adds richness
  • 2 1/2 cups shredded cheddar cheese divided for layering
  • 8 slices cooked and crumbled bacon optional extra for garnish
  • 1/4 cup sliced green onions for fresh flavor and color

Method
 

Preparation
  1. Preheat your oven to 375 degrees F and spray a 3-quart baking dish with cooking spray.
  2. Melt the butter over medium heat in a large pan.
  3. Add the minced garlic and cook for about 30 seconds until fragrant.
  4. Sprinkle in the flour and stir, cooking for about 1 minute.
  5. Gradually whisk in the milk and season with salt and pepper. Bring to a simmer and watch as it thickens over 4-5 minutes.
Assembly
  1. Stir in the parmesan cheese and 1 1/2 cups cheddar cheese until melted.
  2. Add the cooked cauliflower, bacon, and green onions, mixing well.
  3. Pour the mixture into the prepared baking dish and sprinkle the remaining cheddar cheese on top.
Cooking
  1. Bake for 25-30 minutes or until bubbly and golden. Let it rest for 5 minutes before serving.

Notes

For quicker preparation, use pre-cooked bacon. If the cheese sauce isn't thickening, ensure moderate heat while stirring consistently. You may also add vegetables like broccoli or spinach for an extra nutritional boost.
