Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x13 inch baking dish.
  3. In a large skillet over medium-high heat, add diced bacon and chopped sweet onion. Cook for about 10 minutes until the bacon is crispy and the onion is translucent.
  4. Carefully drain the excess grease from the skillet.
  5. In a large bowl, combine the cooked bacon and onion mixture with the beaten eggs, thawed hash browns, and all three cheeses. Stir until well combined.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Bake for 45-50 minutes, until eggs are set and cheese is bubbly and golden. Let it rest for about 10 minutes before serving.

Notes

You can prepare this casserole the night before, cover, and refrigerate. Just add an extra 5-10 minutes to the baking time if cooking straight from the fridge. If the casserole is watery, ensure hash browns are fully thawed and drained.
