Meatball Ingredients
  • 1 lb Ground beef 80/20 blend recommended for best flavor
  • 1 large Egg Acts as a binding agent
  • 1/4 cup Grated cheddar cheese Use freshly grated for best texture
  • 2 tablespoons Taco seasoning Brings authentic Mexican flavors
For Assembly
  • 1/4 cup Enchilada sauce Homemade or store-bought
  • 1 cup Shredded cheddar cheese To sprinkle on top

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, egg, grated cheddar cheese, taco seasoning, onion powder, salt, and pepper.
  3. Mix until just combined, being careful not to overwork the mixture.
  4. Form the mixture into 15 evenly sized meatballs and place on a lined baking sheet.
Cooking
  1. Bake the meatballs for 25 minutes or until fully cooked. Broil for the last 1–2 minutes for a browned exterior.
  2. Reduce the oven temperature to 350°F (175°C).
  3. Pour 1/4 cup of enchilada sauce into a small baking dish, spread it, then add the baked meatballs and pour the remaining sauce over them.
  4. Sprinkle shredded cheddar cheese on top and bake for an additional 15 minutes until the cheese is melted and bubbly.
  5. Let the dish rest for 5 minutes before serving.

Notes

For best results, do not overcrowd the pan. Allow enough space between meatballs. Make ahead of time and refrigerate before baking if desired. The recipe can be doubled.
