  • 2 cups cooked chicken, shredded Freshly roasted or rotisserie works best
  • 1/2 cup garlic aioli Use good quality aioli for flavor
  • 1 cup cheddar cheese, shredded Sharp cheddar melts beautifully
  • 4 large tortillas Flour tortillas hold filling well
  • Salt and pepper to taste Taste as you go

Method
 

Preparation
  1. Warm a skillet over medium heat until it gives off a faint warmth.
  2. Toss shredded chicken with garlic aioli in a bowl, seasoning with salt and pepper; smell for balance.
Cooking
  1. Place a tortilla in the dry skillet and sprinkle a thin layer of cheddar so it starts to melt and cling.
  2. Spoon a quarter of the chicken mixture onto the melted cheese near the center. You should hear a soft sizzle and see the cheese thicken.
  3. Fold the sides, then roll tightly; press gently in the pan until the outside gets golden edges and the seam seals, about 1–2 minutes per side.
  4. Repeat with remaining tortillas, keeping finished wraps tented in foil to stay warm.
  5. Slice on the diagonal and serve hot with a little extra aioli on the side.

Notes

Using fresh garlic will provide a bigger flavor. Grate cheese fresh for better melt. For added flavor, consider adding smoked paprika or chopped cilantro.
