Preparation
- Warm a skillet over medium heat until it gives off a faint warmth.
- Toss shredded chicken with garlic aioli in a bowl, seasoning with salt and pepper; smell for balance.
Cooking
- Place a tortilla in the dry skillet and sprinkle a thin layer of cheddar so it starts to melt and cling.
- Spoon a quarter of the chicken mixture onto the melted cheese near the center. You should hear a soft sizzle and see the cheese thicken.
- Fold the sides, then roll tightly; press gently in the pan until the outside gets golden edges and the seam seals, about 1–2 minutes per side.
- Repeat with remaining tortillas, keeping finished wraps tented in foil to stay warm.
- Slice on the diagonal and serve hot with a little extra aioli on the side.
Notes
Using fresh garlic will provide a bigger flavor. Grate cheese fresh for better melt. For added flavor, consider adding smoked paprika or chopped cilantro.
