  • 2 cups cooked chicken, shredded Use leftover rotisserie chicken for ease.
  • 1 cup long-grain rice Always rinse to remove excess starch.
  • 2 cups chicken broth Homemade broth = more flavor!
  • 1 can cream of mushroom soup Can use cream of chicken instead for variety.
  • 1 cup frozen peas Fresh peas work well too!
  • 1 onion, finely chopped Sauté for extra sweetness.
  • 2 cloves garlic, minced Fresh garlic = bigger flavor!
  • 1 teaspoon salt Adjust based on your broth.
  • 1/2 teaspoon black pepper Add more for a kick.
  • 1 cup shredded cheese (like cheddar) Cheddar melts beautifully!

Preparation
  1. Preheat the Oven: Set your oven to 350°F (175°C).
  2. Sauté Onions and Garlic: In a skillet, heat a tablespoon of oil over medium heat. Add chopped onions and garlic. Sauté until fragrant and translucent.
  3. Combine Ingredients: In a large bowl, mix the cooked chicken, rice, chicken broth, cream of mushroom soup, peas, sautéed onions, salt, and pepper until well combined.
  4. Spread in Casserole Dish: Pour the mixture into a greased 9x13-inch casserole dish. Spread it evenly.
  5. Top with Cheese: Sprinkle shredded cheese over the top for a gooey finish.
  6. Bake: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  7. Cool Before Serving: Let it sit for about 5 minutes before digging in!
  8. Enjoy: Serve it warm and watch everyone’s faces light up!

Notes

Use pre-cooked chicken to cut down on prep time significantly. Don’t forget to check if the rice is fully cooked—if it’s still hard, add a bit more broth and return it to the oven. Spice things up with some diced bell peppers or add a sprinkle of paprika for extra flavor.
