  • 2 lbs chicken tenderloins or breasts/thighs, chopped
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 can cream of celery soup (10.5 oz) adds a subtle dimension
  • 1 can cream of chicken soup (10.5 oz) classic comfort!
  • 1/4 cup milk for that extra creaminess
  • 1 1/2 cups chicken broth for rich flavor
  • 1 box Stove Top chicken stuffing mix (6 oz) the perfect convenience
  • Parsley for garnish optional, but it looks pretty!

Method
 

Preparation
  1. Preheat your oven to 375 degrees F and grease an 11x7 inch baking dish.
  2. Chop your chicken into bite-sized pieces and place them in the dish, seasoning with kosher salt and black pepper.
  3. In a mixing bowl, whisk together the cream of celery soup, cream of chicken soup, and milk until smooth.
  4. Pour the creamy mixture evenly over the seasoned chicken.
  5. Sprinkle the Stove Top chicken stuffing mix generously over the saucy chicken.
  6. Drizzle the chicken broth evenly over the stuffing.
  7. Cover the dish with foil and bake in the oven for 40 minutes.
  8. Remove the foil and bake for an additional 5 minutes until golden.
  9. Garnish with parsley and serve warm, drizzling some sauce over the top.

Notes

Chop chicken ahead of time and store it in the fridge for quick assembly. If casserole is dry, add more broth. Consider adding sautéed mushrooms or frozen peas for extra veggies.
