Preparation
- Preheat your oven to 350°F and lightly grease a 9x13 baking dish.
- In a large bowl, mix together the softened cream cheese, cottage cheese, and sour cream until creamy.
- Stir in the cream of chicken soup along with the garlic and onion powders. Season with salt and pepper.
- Gently fold in the chopped chicken until every piece is coated in the cheese mixture.
- Transfer the mixture into the prepared baking dish, spreading it evenly.
Assembly
- In a small bowl, combine the crushed Ritz crackers with the melted butter.
- Sprinkle this mixture generously over the top of the casserole.
Baking
- Bake uncovered for 30-35 minutes until hot, bubbly, and golden brown on top.
Notes
Make-Ahead Tips: Assemble the casserole up to 24 hours in advance and refrigerate. To freeze, prepare everything except the topping and freeze for up to 3 months. Thaw overnight in the fridge before adding the topping and baking. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
