  • 3 cups cooked and shredded chicken Using freshly shredded chicken adds incredible texture and flavor!
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1.5 cups cheddar cheese, grated
  • 1 sleeve butter crackers, such as Ritz, crushed Adds an irresistible crunch!

Method
 

Preparation
  1. Preheat your oven to 350 degrees F.
  2. Lightly grease a 9-inch square baking dish with nonstick spray.
  3. In a large bowl, stir together the shredded chicken, cream of chicken soup, and sour cream.
  4. Spread half of the chicken mixture into the baking dish.
  5. Sprinkle half of the grated cheddar cheese over the chicken mixture.
  6. Add the remaining chicken mixture, followed by the rest of the cheese.
  7. Top with the crushed crackers.
Baking
  1. Bake in the preheated oven for about 30 minutes, or until the edges are golden brown and bubbling.
  2. Let the casserole rest for about 5 minutes before serving.

Notes

For a veggie boost, consider adding steamed broccoli or cooked mushrooms. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
