Chicken Lo Mein

  • 3–4 pieces boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried) Use fresh or dried noodles, both work.
  • 1 piece red bell pepper Cut into bite-sized pieces.
  • 1 piece yellow bell pepper Cut into bite-sized pieces.
  • 2 pieces carrots (thinly sliced) Cut into thin slices for quick cooking.
  • 2 pieces green onions (chopped)
Sauce Ingredients
  • ¼ cup low-sodium soy sauce Use low-sodium to control salt.
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic Fresh garlic provides bigger flavor.

Method
 

Preparation
  1. Gather all ingredients and chop vegetables into bite-sized pieces.
  2. Cook lo mein noodles according to package instructions until al dente, then drain and set aside.
Cooking
  1. Heat a large skillet or wok over medium-high heat and add a splash of oil.
  2. Add the chicken and sauté until golden brown with faint charred edges, about 6–8 minutes, then remove to a plate.
  3. In the same pan, add the bell peppers, carrots, and green onions; stir-fry until tender yet crisp, about 3–4 minutes.
  4. Return the chicken to the skillet. Add the lo mein noodles, soy sauce, sesame oil, and minced garlic; toss vigorously to coat.
  5. Taste and adjust seasoning; add extra soy or a pinch of sugar for brightness if needed.
  6. Serve hot, garnished with extra green onions or toasted sesame seeds if desired.

Notes

Slice vegetables while noodles cook to save time. To avoid steaming, avoid overcrowding the pan. For heat, add chili oil or stir in shredded basil.
