  • 2 1/4 cups diced cucumbers, partially peeled
  • 1 cup tomato, seeded and diced
  • 1/4 cup red onion, diced
Chickpea Salad Mixture
  • 15 ounces canned chickpeas, rinsed and drained
  • 2 tablespoons fresh lemon juice
  • 1/2 tablespoon fresh parsley, minced
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Preparation
  1. Combine the diced cucumbers, diced tomatoes, and diced red onion in a large bowl.
  2. Add in the rinsed chickpeas, lemon juice, minced parsley, olive oil, kosher salt, and black pepper.
