Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup buttermilk Use buttermilk for extra moisture.
  • 1/2 cup vegetable oil Vegetable oil keeps them tender.
  • 2 large eggs
  • 1 teaspoon vanilla extract
Add-ins
  • 1 cup chocolate chips Feel free to add nuts for crunch!

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry mixture and stir gently until everything is just combined.
Baking
  1. Gently fold in the chocolate chips.
  2. Fill each muffin cup about two-thirds full with batter.
  3. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  4. Allow the muffins to cool for a few minutes before transferring them to a wire rack.

Notes

Overmixing the batter can make muffins dense; stir just until combined. Time-saver: Mix the dry ingredients the night before.
