Preparation
- Preheat oven to 350°F (175°C) and grease two 9-inch cake pans.
- In a large mixing bowl, combine flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add butter, eggs, soured milk, coffee, and vegetable oil. Beat with an electric mixer for 2 minutes until smooth.
Baking the Cakes
- Pour the batter evenly into the prepared pans.
- Bake in preheated oven for 35-40 minutes or until a toothpick inserted comes out clean.
- Allow cakes to cool completely on a wire rack.
Making the Frosting
- In a saucepan over low heat, melt butter, add cream and salt, heating until just boiling.
- Remove from heat, add chocolate chips, and let sit for 5 minutes before stirring until smooth.
- Slowly mix in icing sugar with an electric mixer until spreadable.
Preparing Chocolate Dipped Strawberries
- In a small saucepan, heat cream until just boiling, remove from heat, and stir in chocolate chips until melted and smooth.
- Wash and dry strawberries. Dip each into the chocolate mixture and place on a lined baking sheet to set.
Assembling the Cake
- Once cakes are cool, spread frosting on top of one layer, place the second layer on top, and frost the top and sides.
- Garnish with chocolate dipped strawberries and refrigerate for at least 30 minutes before serving.
Notes
Allow ingredients to reach room temperature for better mixing and don't skip cooling time to avoid a gummy texture.
