Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. In another bowl, cream the softened butter with granulated and brown sugars until fluffy.
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Prepare the filling by combining brown sugar and cinnamon in a small bowl.
  7. Spread half of the dough on a sheet of parchment paper and sprinkle with the filling.
  8. Roll it up tightly and slice into rounds.
  9. Place on a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes or until golden brown.

Notes

Time-saving trick: Make the dough a day ahead! Refrigerate it overnight to enhance the flavors. Try adding chopped nuts or raisins to the filling for an extra crunch.
