  • ½ cup granulated sugar
  • ½ cup brown sugar, packed (the key to that chewy texture!)
  • 1 large egg

For the Filling
  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Whisk together in a bowl: flour, baking powder, salt, and cinnamon.
  3. In another bowl, cream softened butter with granulated and brown sugars until fluffy and light.
  4. Beat in the egg and vanilla extract until the mixture is smooth.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. In a small bowl, combine the brown sugar and cinnamon for the filling.
Assembly
  1. On a sheet of parchment paper, spread half of the dough out.
  2. Sprinkle generously with the filling, then roll it up tightly.
  3. Slice into rounds and place them on a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes until golden brown.

Notes

You can make the dough ahead of time and refrigerate it for up to 3 days. If the dough feels too sticky, chill it in the fridge for about 30 minutes. Try adding chopped nuts or chocolate chips for variety.
