Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a large bowl, mix the melted butter with the brown sugar and granulated sugar until smooth.
- Beat in the eggs and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Pour the batter into your greased pan and spread it out evenly.
- In a small bowl, mix the 1/4 cup of granulated sugar with an extra teaspoon of cinnamon and sprinkle it over the batter.
Baking
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Let the blondies cool before cutting into squares.
Notes
Store leftovers in an airtight container at room temperature for up to 5 days. For longer storage, freeze them wrapped well in foil for about three months.
