Frosting Ingredients
  • 1 cup unsalted butter, room temperature Use unsalted butter for better control over salt.
  • 3–4 cups powdered sugar Start with 3 cups, then add more for a stiffer frosting.
  • 1 tbsp instant coffee or espresso powder Use good quality instant for a cleaner coffee flavor.
  • 1 tbsp boiling water Used to bloom the coffee.
  • 1/8 tsp salt Omit if using salted butter.
  • 2 tbsp milk or heavy whipping cream Add up to 1/4 cup for a softer texture.

Method
 

Preparation
  1. In a small bowl, mix the boiling water and instant coffee until it dissolves.
  2. In a standing mixer or large bowl, cream the butter for 3-5 minutes until very light and creamy.
  3. Turn off the mixer and add the powdered sugar, beating on low until combined.
  4. Increase the speed to medium and mix for another 3-4 minutes until light and fluffy.
  5. Add the coffee mixture and salt, and mix until fully combined.
  6. Mix in the milk or heavy cream, one tablespoon at a time, until the desired consistency is reached.

Notes

If the butter isn't soft, grate it on a box grater to soften quickly. For too-thick frosting, add milk a teaspoon at a time. Stir in vanilla or cinnamon for added flavor.
