Ingredients
  

For the Bread
  • 1/3 cup light brown sugar
  • 1 tsp ground cinnamon
  • 2/3 cup white sugar
  • 1/2 cup unsalted butter, softened Use unsalted butter to control salt.
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour Measure properly by spooning and leveling.
  • 1 3/4 tsp baking powder
  • 1/2 cup milk
  • 2 apples, peeled and chopped Pick firm, tart apples for the best texture.
For the Glaze
  • 1/2 cup powdered sugar
  • 2 tbsp milk or cream

Method
 

Preparation
  1. Preheat your oven to 350°F and grease or line a 9×5-inch loaf pan.
  2. In a small bowl, mix 1/3 cup light brown sugar with 1 tsp ground cinnamon; set aside.
  3. In a mixing bowl, cream together 2/3 cup white sugar and 1/2 cup softened butter until light and fluffy.
  4. Beat in the 2 eggs one at a time, and then stir in 1 1/2 tsp vanilla extract.
  5. In a separate bowl, whisk together 1 1/2 cups all-purpose flour and 1 3/4 tsp baking powder.
  6. Fold the dry mix into the wet batter.
  7. Add 1/2 cup milk and stir until the batter is smooth and slightly thick.
Assembly
  1. Pour half the batter into the prepared pan.
  2. Scatter half the chopped apples over the batter, then sprinkle half the cinnamon sugar on top.
  3. Gently press the apples into the batter.
  4. Add the remaining batter, then the rest of the apples and the rest of the cinnamon sugar.
  5. Swirl lightly with a knife to create ribbons of cinnamon.
Baking
  1. Bake for 50–60 minutes, until a toothpick inserted comes out clean and the top is golden brown.
  2. Let the loaf cool in the pan for 10 minutes, then transfer to a rack.
Glazing
  1. Whisk together 1/2 cup powdered sugar and 2 tbsp milk or cream until smooth.
  2. Drizzle the glaze over the cooled bread.

Notes

For best results, chop the apples into small, even pieces so they bake evenly. To fix a soggy bottom, tent foil and bake for an additional 10-15 minutes.
