Preparation
- Preheat your oven to 350°F and grease or line a 9×5-inch loaf pan.
- In a small bowl, mix 1/3 cup light brown sugar with 1 tsp ground cinnamon; set aside.
- In a mixing bowl, cream together 2/3 cup white sugar and 1/2 cup softened butter until light and fluffy.
- Beat in the 2 eggs one at a time, and then stir in 1 1/2 tsp vanilla extract.
- In a separate bowl, whisk together 1 1/2 cups all-purpose flour and 1 3/4 tsp baking powder.
- Fold the dry mix into the wet batter.
- Add 1/2 cup milk and stir until the batter is smooth and slightly thick.
Assembly
- Pour half the batter into the prepared pan.
- Scatter half the chopped apples over the batter, then sprinkle half the cinnamon sugar on top.
- Gently press the apples into the batter.
- Add the remaining batter, then the rest of the apples and the rest of the cinnamon sugar.
- Swirl lightly with a knife to create ribbons of cinnamon.
Baking
- Bake for 50–60 minutes, until a toothpick inserted comes out clean and the top is golden brown.
- Let the loaf cool in the pan for 10 minutes, then transfer to a rack.
Glazing
- Whisk together 1/2 cup powdered sugar and 2 tbsp milk or cream until smooth.
- Drizzle the glaze over the cooled bread.
Notes
For best results, chop the apples into small, even pieces so they bake evenly. To fix a soggy bottom, tent foil and bake for an additional 10-15 minutes.
