  • 2 lbs boneless, skinless chicken breasts
  • 1 8 oz block cream cheese
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese Use sharp cheddar for more bite.
  • 6 slices bacon, cooked and crumbled Thick-cut bacon = better texture.
  • 6 toasted buns

Method
 

Preparation
  1. Place chicken breasts in your slow cooker or Instant Pot.
  2. Sprinkle the ranch seasoning evenly over the meat.
  3. Cube the cream cheese and tuck it around the chicken.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
Cooking
  1. Crisp the bacon until golden. Drain and crumble it.
  2. After cooking, shred the chicken with two forks.
  3. Stir in the melted cream cheese and ranch juices until saucy.
  4. Add the shredded cheddar and crumbled bacon; fold gently until the cheese melts.
  5. Spoon into toasted buns and serve right away.

Notes

For a playful casserole twist, try a bubble-up version. You can use pre-cooked rotisserie chicken to save time.
