Ingredients
  

For the crust and topping

  • 1/4 teaspoon salt Balances out the sweetness.
For the filling
  • 1 cup fresh or frozen cranberries Tart bursts of flavor that shine through!
  • 1/4 cup orange juice Brightens up the filling with a citrus zing.
  • 1 teaspoon vanilla extract A warm undertone that makes it all come together.
For the glaze
  • 1 cup powdered sugar For that sweet finishing touch.
  • 1-2 tablespoons milk Just enough for a smooth drizzle.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper.
  2. In a large bowl, mix the unsalted butter and granulated sugar until creamy.
  3. Stir in the flour, oats, and salt until combined. Press half of this mixture into the bottom of the prepared pan.
Filling and Topping
  1. In another bowl, combine fresh or frozen cranberries, orange juice, and vanilla extract. Spread this mixture evenly over the crust.
  2. Crumble the remaining half of the oat mixture over the cranberry filling.
Baking
  1. Bake for 30-35 minutes or until the top is golden brown.
Cooling and Glazing
  1. Let it cool, then mix powdered sugar with milk until smooth. Drizzle over the cooled bars.

Notes

These bars are great for a family dinner, Sunday brunch, or a cozy night in with tea. Store leftovers tightly wrapped in the fridge for up to a week, or freeze for up to a month.
