Preparation
- Preheat your oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper.
- In a large bowl, mix the unsalted butter and granulated sugar until creamy.
- Stir in the flour, oats, and salt until combined. Press half of this mixture into the bottom of the prepared pan.
Filling and Topping
- In another bowl, combine fresh or frozen cranberries, orange juice, and vanilla extract. Spread this mixture evenly over the crust.
- Crumble the remaining half of the oat mixture over the cranberry filling.
Baking
- Bake for 30-35 minutes or until the top is golden brown.
Cooling and Glazing
- Let it cool, then mix powdered sugar with milk until smooth. Drizzle over the cooled bars.
Notes
These bars are great for a family dinner, Sunday brunch, or a cozy night in with tea. Store leftovers tightly wrapped in the fridge for up to a week, or freeze for up to a month.
