Ingredients
  

Cake Batter
  • 1 box yellow cake mix
  • 2 large beaten eggs
  • 1/2 cup softened butter Use unsalted butter for better control of salt.
Frosting
  • 4 cups confectioner’s sugar Sift to avoid lumps.
  • 8 oz softened cream cheese Use room-temperature cream cheese for smooth frosting.
  • 1 small spoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Beat the eggs briefly, and soften the butter until smooth.
  3. Stir the cake mix, eggs, and butter together until the mixture is thick and spreadable.
  4. Butter a 9 x 13-inch pan and press the batter into it using an offset spatula or clean hands.
Making the Frosting
  1. In a separate bowl, beat the cream cheese with the vanilla, then add the confectioner’s sugar and stir until creamy and smooth.
Baking
  1. Spread the cream cheese mixture over the cake batter in an even layer.
  2. Bake for 35 minutes; the edges should turn lightly golden and the frosting will set with tiny cracks.
  3. A toothpick inserted into the cake layer (not the frosting) should come out mostly clean.
  4. Cool fully on a rack before cutting into squares.

Notes

For a different twist, try stirring 1 tsp of cinnamon into the batter for a warm spice note. Store in an airtight container in the fridge for 3-4 days or freeze for up to 2 months.
