Preparation
  1. Set the cream cheese on the counter for 20–30 minutes to soften.
  2. Put the cream cheese, sugar, and vanilla in a mixing bowl. Beat until very smooth and free of lumps.
  3. Chill a separate bowl and the whisk attachment for ten minutes; cold tools help the cream whip better.
  4. Pour the heavy cream into the chilled bowl and whip until stiff peaks form.
  5. Fold one-third of the whipped cream into the cream cheese mixture to loosen it.
  6. Fold in the remaining whipped cream until just combined.

Notes

Time-saver: Chill your bowl while the cream cheese softens. Common mistake + fix: If the cream is runny, keep whipping in short bursts; cold the bowl again if needed. Simple variation: Fold in a spoonful of berry jam or citrus zest for brightness.
