Preparation
  1. Preheat your oven to a cozy 375°F (190°C). The anticipation is half the fun!
  2. In a saucepan, melt the butter over medium heat. Add the finely chopped onion and minced garlic. Sauté until they are soft and translucent.
  3. In a large bowl, combine the thinly sliced potatoes, heavy cream, and the sautéed onion and garlic mixture. Season generously with salt and pepper.
Layering
  1. Layer half of the potato mixture into a greased baking dish. Sprinkle half of the cheese on top.
  2. Repeat with the remaining potato mixture, topping with the rest of the cheese.
Baking
  1. Cover the dish with foil and bake for 45 minutes.
  2. Remove the foil and continue to bake for an additional 15-20 minutes until the top is golden and bubbly.
Serving
  1. Garnish with fresh herbs if desired, and serve hot.

Notes

Use a mandoline slicer for evenly sliced potatoes. If potatoes aren’t tender enough, cover and return to the oven for a bit longer. For an extra kick, add cooked bacon bits or spinach.
