Preparation
- Start by patting the shrimp and cod dry with paper towels. Lightly season them with salt and pepper.
Cooking
- Heat the butter and olive oil in a large skillet over medium heat. Toss in the shallots and sauté until they’re soft and fragrant.
- Add in the minced garlic and cook for an additional 30 seconds.
- Pour in the white wine (or seafood stock) and let it simmer for 2 to 3 minutes to reduce slightly.
- Stir in the heavy cream and bring it to a gentle simmer, stirring until the sauce starts to thicken up a bit — about 3 to 4 minutes.
- Add the cod chunks and let them cook for 3 to 4 minutes. Then, gently add the shrimp and cook for another 2 to 3 minutes, watching closely.
- Squeeze in the lemon juice, add the chopped parsley, and sprinkle some Parmesan on top if desired. Stir and taste for seasoning.
Notes
If you’re short on time, buy pre-made garlic paste or minced garlic for quicker prep. If the sauce is too thin, let it simmer longer. Feel free to add hot sauce or favorite herbs for a twist.
