  • 4 large russet potatoes Wash and scrub thoroughly.
  • 2 tablespoons olive oil Use extra-virgin for better flavor.
  • 1 teaspoon garlic powder Fresh garlic can be used for added flavor.
  • 1 teaspoon smoked paprika Provides a warm, campfire aroma.
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • Fresh herbs (optional) Chopped rosemary or thyme for garnish.

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and scrub the potatoes thoroughly to retain texture. Cut each potato into about 8 wedges.
  3. In a large bowl, combine the potato wedges with olive oil, garlic powder, smoked paprika, sea salt, and black pepper. Toss well to coat.
  4. Spread the seasoned wedges on the baking sheet in a single layer with space between them.
Baking
  1. Bake for 30 minutes, flipping the wedges halfway through to ensure even cooking.
  2. Look for golden brown edges and a fragrant aroma when done.
Serving
  1. Remove from the oven and let cool for a couple of minutes before serving warm.

Notes

For a time-saver, soak the cut wedges in cold water for 10 minutes before baking. To avoid soggy wedges, make sure they are spaced out on the baking sheet. Optionally, sprinkle with herbs after baking or add cayenne for heat.
